Wine-Braised Mushrooms with Barley Bites

A flavorful recipe by Vasilis Patsis, with wine-braised mushrooms that will truly delight you!

 

 

What we will need:

  • 500 g white, shiitake, brown, or mixed mushrooms of your choice
  • 3 tbsp olive oil
  • 2–3 garlic cloves
  • 1 glass good red wine
  • Fresh oregano or thyme leaves
  • 1 bunch fresh spring onions
  • ¼ cup crumbs from Barley Bites
  • Salt and freshly ground pepper

Execution:

  1. In a wide, heavy-based pot, heat the olive oil. Add the mushrooms and salt, and sauté over high heat for 5–10 minutes, stirring until they release their moisture and take on color.
  2. Add the chopped spring onions and garlic. Stir briefly, then deglaze with the red wine.
  3. Add the fresh oregano or thyme sprigs, allow the wine to evaporate, and top up with just enough vegetable stock to cover the mushrooms. Cover and simmer for about 15 minutes until the liquid reduces and the sauce thickens.
  4. Finally, add chopped parsley if desired and stir. Sprinkle with the Barley Bites crumbs and freshly ground pepper before serving.
