Vegan Lentil Balls with Sfakian Barley Leaven Rusks,

What we will need:
- 200 g cooked lentils
- 3 Sfakian Barley Leaven Rusks with no added salt
- 1 onion, finely chopped
- 1 garlic clove, finely chopped
- 1 tsp cumin
- 1 tsp paprika
- 3 tbsp olive oil
- Fresh herbs (oregano, thyme)
- Salt and pepper (optional)
- Olive oil
Execution:

- Mash the cooked lentils with a fork in a large bowl.
- Sauté the chopped onion and garlic in 1 tbsp olive oil until softened.
- Add everything to the bowl with the lentils, including the cumin, paprika, the Sfakian Barley Leaven Rusks and herbs. Mix well until a uniform dough is formed.
- Shape small balls and place them on an oiled baking tray.
- Bake in the oven at 180°C (350°F) for 20-25 minutes, until lightly golden and crispy.
- Remove from the oven and let them cool slightly before serving.
