What we will need:

  • 200 g cooked lentils
  • 3 Sfakian Barley Leaven Rusks with no added salt
  • 1 finely chopped onion
  • 1 clove of garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 3 tbsp olive oil
  • Fresh herbs (oregano, thyme)
  • Salt and pepper (optional)
  • Olive oil

Execution:

    1. Mash the cooked lentils with a fork in a large bowl.
    2. Sauté the finely chopped onion and garlic in 1 tbsp olive oil until softened.
    3. Add everything to the bowl with the lentils, including the cumin, paprika, the Sfakian Barley Leaven Rusks and herbs. Mix well until a uniform dough is formed.
    4. Shape small balls and place them on an oiled baking tray.
    5. Bake in the oven at 180°C (350°F) for 20-25 minutes, until lightly golden and crispy.
    6. Remove from the oven and let them cool slightly before serving.
