Summer Watermelon Salad

A refreshing salad with watermelon, feta, and Barley Ring Rusks! A recipe by Vasilis Patsis!

What we will need:

For the dressing:

  • ¼ cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • ½ tbsp salt

 

For the salad:

  • 300 g seedless watermelon, cubed
  • 1 medium cucumber, finely chopped
  • 100 g crumbled feta
  • ½ red onion, thinly sliced
  • Coarsely chopped mint (or spearmint), to taste
  • Extra sea salt, optional
  • For serving: crumbled Barley Ring Rusks

Execution:

  1. In a small bowl, whisk together the olive oil, vinegar, and salt.
  2. In a large serving bowl, combine the watermelon, cucumber, feta, red onion, and mint.
  3. Add the dressing and toss gently.
  4. Serve the salad on a plate and garnish with crumbled Barley Ring Rusks.
  5. Add extra mint and sea salt if desired.
