Spinach Salad with Pomegranate, Manouri and Apaki

What we will need:

For the salad:

  • 300 g tender spinach leaves, washed and stemless (or a mixed green salad of your choice)
  • 1 pomegranate, seeds only
  • 1 cup walnuts, coarsely chopped
  • 100 g manouri cheese
  • 50 g apaki (smoked pork)

 

For the vinaigrette:

  • 3 tbsp extra virgin olive oil
  • 2 tbsp white balsamic vinegar
  • 2 tbsp fresh orange juice
  • ½ tsp honey

Execution:

  1. Place the spinach (or mixed greens) in a bowl along with the apaki, sliced thinly.
  2. Add the manouri, walnuts, and pomegranate seeds.
  3. Blend all vinaigrette ingredients together and pour over the salad.
  4. Serve with Carob Breadsticks.
