Spinach Rice with Sunflower Seed Breadsticks
Time for a beloved homemade spinach rice served with Sunflower Seed Breadsticks.
What we will need:
- 700 g fresh spinach
- 2 onions
- 1 bunch spring onions
- 230 g white rice (glacé)
- ½ tsp nutmeg
- 1 leek (white part only)
- 500 g water
- 1 vegetable stock cube or aromatic vegata mix
- Juice and zest of 2 lemons
- ⅓ bunch dill
- 2 tbsp parsley
- Olive oil
- Salt
- Pepper
- 1 grated tomato (optional) or 1 tsp tomato paste
- Sunflower Seed Breadsticks
Execution:
- In a wide pot, heat some olive oil, finely chop the onions and leek, and sauté over medium-high heat.
- Add the spinach (washed and well drained) in batches until all of it wilts and releases its juices, seasoning with salt.
- Add the rice, nutmeg, stock cube, and water. Cover with a lid and cook over medium heat for about 20 minutes.
- Turn off the heat once the rice is almost ready. Add the finely chopped spring onions, dill, parsley, a little olive oil, lemon juice, and zest.
- Cover again with the lid and let sit for 10 minutes to absorb the liquids.
- Serve with feta or yogurt and Sunflower Seed Breadsticks.
