Spinach Rice with Sunflower Seed Breadsticks

Time for a beloved homemade spinach rice served with Sunflower Seed Breadsticks.

What we will need:

  • 700 g fresh spinach
  • 2 onions
  • 1 bunch spring onions
  • 230 g white rice (glacé)
  • ½ tsp nutmeg
  • 1 leek (white part only)
  • 500 g water
  • 1 vegetable stock cube or aromatic vegata mix
  • Juice and zest of 2 lemons
  • ⅓ bunch dill
  • 2 tbsp parsley
  • Olive oil
  • Salt
  • Pepper
  • 1 grated tomato (optional) or 1 tsp tomato paste
  • Sunflower Seed Breadsticks

Execution:

  1. In a wide pot, heat some olive oil, finely chop the onions and leek, and sauté over medium-high heat.
  2. Add the spinach (washed and well drained) in batches until all of it wilts and releases its juices, seasoning with salt.
  3. Add the rice, nutmeg, stock cube, and water. Cover with a lid and cook over medium heat for about 20 minutes.
  4. Turn off the heat once the rice is almost ready. Add the finely chopped spring onions, dill, parsley, a little olive oil, lemon juice, and zest.
  5. Cover again with the lid and let sit for 10 minutes to absorb the liquids.
  6. Serve with feta or yogurt and Sunflower Seed Breadsticks.
