Spinach Pie with Handmade Whole Phyllo Dough and Oat
A spinach pie,
pure delight, like the one we used to eat from grandma’s hands. Crunchy and
delicious, with all the secrets of success and with high nutritional value!

What we will need:
For the phyllo dough:
- 500 gr. wholemeal flour
- 200 ml lukewarm water
- 2 tablespoons of olive oil
- 1 teaspoon apple cider vinegar
- 1/2 tablespoon sea salt
For the filling:
- 600 gr. fresh spinach
- 5 spring onions
- A bunch of parsley
- A bunch of dill
- 1 tsp sweet freshly grated nutmeg
- ½ tea cup crushed Oat Bites with no added salt
- ½ tea cup olive oil
- Salt
- Pepper
- 150 gr. goat cheese
Execution:
For the phyllo dough:
- Put the flour, water, olive oil, apple cider vinegar and salt in a bowl and knead until you have a soft dough that won’t stick to your hands. Wrap the dough in transparent film and leave it in the refrigerator.
For the filling:
- Wash the spinach and onions, take a deep bowl and cut the spinach into strips (like lettuce) and the onions into very thin slices.
- We also chop our aromatics (dill and parsley). Then we add the salt and pepper and rub them slightly with our hands to release their juices.
- Add the olive oil and the crushed Ntourountous Organic Oat Bites with no added salt, the nutmeg and mix well the whole filling mixture.
- Then we take the dough, cut it into 4 equal pieces and open them into phyllo with the help of a rolling pin, constantly flouring the surface of the counter and the sheet we open.
- After doing this, grease the surface of a pan and spread the first two phyllo. Then pour the filling, break the goat’s feta and spread the other two leaves on top.
- Cut the pie into pieces and bake in a preheated oven at 170-180 degrees for about 45 minutes.
