Shakshuka with Ntourountous Barley Ring Rusks

What we will need:
Ingredients for 2 servings:
- 1 large onion, sliced into rings
- 1 bell pepper, cut into strips
- 2 garlic cloves, finely chopped
- 4 eggs
- 1 tbsp olive oil
- 500 g grated tomatoes
- 200 g tomato paste
- 1 tsp sweet paprika
- 1 tsp smoked paprika
- ½ tsp cumin
- 10 cherry tomatoes, cut into thirds
- 1 tsp honey
- Salt & pepper
- Fresh parsley, finely chopped (for garnish)
- Barley Ring Rusks
Execution:
- In a non-stick pan, sauté the onion, bell pepper, and garlic for 7–8 minutes. Add the sweet and smoked paprika, cumin, cherry tomatoes, salt, and pepper, and stir well.
- Add the grated tomatoes, tomato paste, and honey. Let simmer gently for 15 minutes.
- Crack the eggs on top, reduce the heat, cover the pan, and cook for 6 minutes.
- Garnish with fresh parsley and serve with the Ntourountous Barley Ring Rusks.
