What we will need:

Ingredients for 2 servings:

  • 1 large onion, sliced into rings
  • 1 bell pepper, cut into sticks
  • 2 garlic cloves, finely chopped
  • 4 eggs
  • 1 tbsp olive oil
  • 500g grated tomatoes
  • 200g tomato purée
  • 1 tsp sweet paprika
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 10 cherry tomatoes, cut into thirds
  • 1 tsp honey
  • Salt & pepper
  • Freshly chopped parsley for garnish
  • Barley Ring Rusks

Execution:

  1. In a non-stick pan, sauté the onion, bell pepper, and garlic for 7–8 minutes, adding the sweet and smoked paprika, cumin, cherry tomatoes, salt, and pepper and stir well.
  2. Add the grated tomatoes, tomato purée and honey, then let simmer for 15 minutes.
  3. Crack the eggs on top, reduce the heat, cover and cook for 6 minutes.
  4. Garnish with freshly chopped parsley and serve with Barley Ring Rusks.
