Potatoes with Eggs and Sausages
A simple yet incredibly flavorful recipe for Potatoes with Eggs and Sausages.
What we will need:
- 2 medium potatoes
- Olive oil
- Salt and pepper
- 200 g country-style sausages, diced
- 3 spring onions, finely chopped
- 4 eggs
- 150 g kefalotyri or graviera cheese, cubed
- 8–10 cherry tomatoes, quartered
Execution:
- Dice the potatoes into small cubes and season with salt.
- Fry the potatoes in a little olive oil, and when ready, add the sausages. Let them cook together.
- Add the spring onions and make small wells in the pan to crack the eggs into. Cover the pan and let everything cook together.
- Towards the end, add the cheese, season with salt and pepper, and serve with Legume Bites.
