Ouzo Tzatziki with Legume Rusks
A delicious twist on the classic tzatziki. This ouzo-infused version is the most flavorful you’ve ever tried!
What we will need:
- 1 large cucumber, diced
- 1 tbsp ouzo
- 3–4 garlic cloves, crushed and finely chopped
- 1 cup white vinegar
- 2 spring onions, for garnish
- 1 cup dill, finely chopped
- 2½ cups strained yogurt
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- Coarse salt and freshly ground black pepper
Execution:
- Wash the cucumber well, grate it on the coarse side of a grater, and let it drain in a strainer (alternatively, you can dice it into small cubes). Transfer it to a bowl.
- In a blender, combine the garlic, vinegar, dill, and spring onions. Blend until the ingredients are finely chopped and combined, but not pureed.
- Add the mixture to the bowl with the cucumber, then mix in the yogurt. Stir well, adding olive oil, lemon juice, salt, and pepper.
- Serve ideally on top of Legume Rusks or as a dip with grilled meats and other dishes.
Tip: Keeps in the refrigerator for about one week.
