Ouzo Tzatziki with Legume Rusks

A delicious twist on the classic tzatziki. This ouzo-infused version is the most flavorful you’ve ever tried!

What we will need:

  • 1 large cucumber, diced
  • 1 tbsp ouzo
  • 3–4 garlic cloves, crushed and finely chopped
  • 1 cup white vinegar
  • 2 spring onions, for garnish
  • 1 cup dill, finely chopped
  • 2½ cups strained yogurt
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • Coarse salt and freshly ground black pepper

Execution:

  1. Wash the cucumber well, grate it on the coarse side of a grater, and let it drain in a strainer (alternatively, you can dice it into small cubes). Transfer it to a bowl.
  2. In a blender, combine the garlic, vinegar, dill, and spring onions. Blend until the ingredients are finely chopped and combined, but not pureed.
  3. Add the mixture to the bowl with the cucumber, then mix in the yogurt. Stir well, adding olive oil, lemon juice, salt, and pepper.
  4. Serve ideally on top of Legume Rusks or as a dip with grilled meats and other dishes.

Tip: Keeps in the refrigerator for about one week.
