Olive Paste with Ntourountous Legume Breadsticks

Today we’re making homemade olive paste — no more store-bought versions! From now on, we do it ourselves — and trust us, it turns out so much better. The recipe is simple, and you probably already have everything you need at home. Let’s make it in no time!

What we will need:

  • 1½ cups Kalamata (or Throumba) olives, pitted
  • 4 tbsp extra virgin olive oil
  • 1 tsp vinegar
  • ½ tsp fresh oregano leaves
  • ½ tsp finely chopped fennel leaves
  • ¼ tsp pepper
  • Grated goat cheese or feta

Execution:

  1. Place all the ingredients in a blender and blend until you get a smooth, creamy paste.
  2. If you’re not using it right away, transfer it to a jar, cover the surface with olive oil, and store it in the fridge for up to 2 weeks.
  3. Serve with Ntourountous Legume Breadsticks and grated cheese.
