Lentil Soup with Tarragon and Orange
Lentil soup with tarragon and orange, a recipe that will make you love lentils even more than before!
What we will need:
- 250 g lentils
- 2 small carrots, diced
- 1 piece celeriac, grated on the coarse side of the grater
- 1 onion, finely chopped
- 2 garlic cloves, sliced
- 1 bay leaf
- 1 vegetable stock cube (optional)
- 1 tbsp dried tarragon
- Fresh oregano leaves, to taste
- Zest and juice of one orange
- Salt & pepper
Execution:

- Rinse the lentils well, bring them to a quick boil, and drain.
- Sauté them with all the vegetables, then add 1 liter of water. Add the stock cube, season with salt and pepper, and cook until the lentils are tender, about 20–30 minutes.
- Toward the end, add the tarragon, fresh oregano leaves, orange zest, and orange juice.
- Finally, serve with fresh olive oil and Toasted Bread with Oil and Oregano.
