Lentil Soup with Tarragon and Orange

Lentil soup with tarragon and orange, a recipe that will make you love lentils even more than before!

What we will need:

  • 250 g lentils
  • 2 small carrots, diced
  • 1 piece celeriac, grated on the coarse side of the grater
  • 1 onion, finely chopped
  • 2 garlic cloves, sliced
  • 1 bay leaf
  • 1 vegetable stock cube (optional)
  • 1 tbsp dried tarragon
  • Fresh oregano leaves, to taste
  • Zest and juice of one orange
  • Salt & pepper

Execution:

    1. Rinse the lentils well, bring them to a quick boil, and drain.
    2. Sauté them with all the vegetables, then add 1 liter of water. Add the stock cube, season with salt and pepper, and cook until the lentils are tender, about 20–30 minutes.
    3. Toward the end, add the tarragon, fresh oregano leaves, orange zest, and orange juice.
    4. Finally, serve with fresh olive oil and Toasted Bread with Oil and Oregano.
