Grilled Soutzoukakia with Toasted Bread with Tomato and Paprika

A spicy recipe for grilled soutzoukakia, where instead of using bread or toast, we make the difference by adding Toasted Bread with Tomato and Paprika! A recipe by Vasilis Patsis!

What we will need:

  • ½ kg ground beef (from flank with its fat)
  • ½ kg ground lamb or mutton
  • 1 onion, grated
  • 1–2 garlic cloves, grated
  • 15 g salt
  • 1 tsp cumin
  • 1 tsp kebab spice mix
  • 3 g fenugreek (optional)
  • ½ tsp ground pepper
  • 1 egg yolk and the egg white, lightly beaten
  • 100 g finely grated Toasted Bread with Tomato and Paprika

Execution:

  1. Place both types of ground meat in a large tray, add all the spices, and knead thoroughly. If the mixture sticks to your hands, wet them with water. It is important that the meat is very cold before kneading.
  2. After kneading well, cover the meat and refrigerate for about 1 hour.
  3. Remove from the refrigerator, add the remaining ingredients, and knead again very well.
  4. Cover the mixture and refrigerate for at least 12 hours.
  5. Remove from the refrigerator, shape into soutzoukakia, and grill until cooked through.
  6. Serve with yogurt and sumac, with a few drops of lime and lemon.
