Green Salad with Avocado, Mushrooms and Barley Bites
A wonderfully refreshing and easy green salad with avocado, mushrooms, and Barley Bites! A recipe by Vasilis Patsis!
What we will need:
- 350 g assorted greens of your choice (spinach leaves, arugula, lollo rosso)
- 300 g white mushrooms, sliced
- 2 large ripe avocados, sliced
- 500 g cherry tomatoes, halved
- 1 tbsp extra virgin olive oil
- 1/2 tbsp. salt
For the dressing:
- ¼ cup extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp honey
- 1 tsp Dijon mustard
- Salt & freshly ground black pepper
- Barley Bites
Execution:
- Heat 1 tbsp olive oil in a pan with the garlic powder and sauté the mushrooms until golden. Transfer to a plate lined with paper towel and set aside.
- In a shaker or blender, whisk together all the dressing ingredients.
- In a large bowl, mix the greens, mushrooms, cherry tomatoes, and avocado slices. Drizzle with the dressing.
- Adjust salt if needed and serve with crumbled Barley Bites.
