Green Salad with Avocado, Mushrooms and Barley Bites

A wonderfully refreshing and easy green salad with avocado, mushrooms, and Barley Bites! A recipe by Vasilis Patsis!

What we will need:

  • 350 g assorted greens of your choice (spinach leaves, arugula, lollo rosso)
  • 300 g white mushrooms, sliced
  • 2 large ripe avocados, sliced
  • 500 g cherry tomatoes, halved
  • 1 tbsp extra virgin olive oil
  • 1/2 tbsp. salt

 

For the dressing:

  • ¼ cup extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt & freshly ground black pepper
  • Barley Bites

Execution:

  1. Heat 1 tbsp olive oil in a pan with the garlic powder and sauté the mushrooms until golden. Transfer to a plate lined with paper towel and set aside.
  2. In a shaker or blender, whisk together all the dressing ingredients.
  3. In a large bowl, mix the greens, mushrooms, cherry tomatoes, and avocado slices. Drizzle with the dressing.
  4. Adjust salt if needed and serve with crumbled Barley Bites.
