Fava with caramelized onions & Traditional Legumes bites

We love all legumes but our favorite is Fava bean! So we cook Fava with Caramelized onions & accompany it with the delicious and nutritious Legume Bite.

What we will need:

  • 250 gr. split peas
  • 1 sliced ​​onion
  • 1 clove of garlic, finely chopped
  • 2 tbsp. olive oil
  • 2 tbsp. fresh thyme
  • ½ sp. cumin
  • 1 tbsp. turmeric
  • 650 ml of water
  • 3 onions
  • 3 tbsp. balsamic vinegar from red wine
  • 3 tbsp. molasses or agave syrup
  • Salt Pepper
  • 100 gr. little Legum Bites



  1. Saute the onion and garlic together with the thyme, turmeric & cumin in a saucepan with 1 tbsp. olive oil until soft.
  2. Add the fava beans and water, season with salt and pepper, and as soon as the ingredients get a boil, lower the heat and simmer with the lid closed for about 25 minutes until the fava beans are soft.
  3. With a hand mixer, mash the fava so that it gets a velvety and uniform texture.
  4. Cut the onions into slices and in a non-stick pan sauté them with the rest of the olive oil, adding salt, pepper & fresh thyme. Once the onions are soft, add the molasses and balsamic vinegar and leave them on low heat for about 20 minutes.
  5. Serve the fava with the caramelized onions together with Bites of Legumes “Ntourountous” & enjoy !!
