Fava with Caramelized Onions and Legume Bites

We love all legumes, but our favorite is fava! We cook it with caramelized onions and serve it with the delicious and nutritious Legume Bites.

What we will need:

  • 250 g fava
  • 1 onion, sliced
  • 1 clove garlic, finely chopped
  • 2 tbsp olive oil
  • 2 tbsp fresh thyme
  • ½ tsp cumin
  • 1 tsp turmeric
  • 650 ml water
  • 3 onions
  • 3 tbsp balsamic vinegar (from red wine)
  • 3 tbsp molasses or agave syrup
  • Salt & pepper
  • 100 g Legume Bites

 

Execution:

  1. Sauté the onion and garlic with the thyme, turmeric, and cumin in a pot with 1 tbsp olive oil until softened.
  2. Add the fava and water, season with salt and pepper, and once it comes to a boil, lower the heat and simmer covered for about 25 minutes, until the fava softens.
  3. Blend with a hand blender until smooth and creamy.
  4. Slice the onions and sauté them in a non-stick pan with the remaining olive oil, adding salt, pepper, and fresh thyme. Once softened, add the molasses and balsamic vinegar and cook on low heat for about 20 minutes.
  5. Serve the fava topped with the caramelized onions and Legume Bites, and enjoy.
