Dakos with Roasted Cherry Tomatoes

Crete’s most beloved dish with a twist! Dakos with roasted cherry tomatoes and Sfakian Barley Rusks. A recipe by Vasilis Patsis!

What we will need:

    • 300 g cherry tomatoes, halved
    • 200 g feta, crumbled
    • 3 Sfakian Barley Rusks
    • 1 tsp fresh oregano
    • 1 tbsp capers
    • 1 tbsp olives
    • ½ tbsp garlic powder
    • Salt
    • Pepper
    • Olive oil
For serving:
Capers, pickled chili peppers, and balsamic cream.

Execution:

  1. Place the cherry tomatoes in a bowl with oregano, salt, pepper, and olive oil.
  2. Heat a pan over medium heat and sauté the cherry tomatoes over high heat for 4–5 minutes.
  3. Arrange the rusks on a plate and top with the roasted tomatoes.
  4. Add the crumbled feta, olives, capers or caper leaves, drizzle with olive oil, and finish with balsamic cream.
