Chickpea Salad with Multi-grain Toasted Bread and Orange Vinaigrette

A flavorful and nutrient-rich salad with chickpeas, Multi-grain Toasted Bread, and a must-try orange vinaigrette! A recipe by Vasilis Patsis!

What we will need:

  • 2 cups cooked chickpeas
  • 50 g pickled samphire or arugula
  • 12 cherry tomatoes, halved
  • Seeds from 1 pomegranate
  • ½ cup walnuts, coarsely chopped
  • ½ onion, sliced into rings
  • Salt & freshly ground pepper
  • Multi-grain Toasted Bread

 

For the orange vinaigrette:

  • 3 tbsp extra virgin olive oil
  • 4 tbsp fresh orange juice
  • 1 tsp apple cider vinegar
  • ½ tsp mustard

Execution:

  1. In a jar with a lid, shake the vinaigrette ingredients well until you get a thick sauce.
  2. In a deep platter, combine all the salad ingredients and season with salt and pepper.
  3. Drizzle the salad with the orange vinaigrette and serve with Multi-grain Toasted Bread.
