Chicken Salad with Ntourountous Organic Rusks

Today we’re making a recipe that will save you on those busy days when there’s no time to cook — a delicious chicken salad with Cretan graviera cheese and yogurt on a crunchy base. It’s rich in nutrients and perfect for keeping you energized throughout a long day.

For this dish, we used Organic Triticum Dicoccum Rusks.

What we will need:

  • 250 g mixed vegetables
  • 2 potatoes
  • ½ roasted chicken
  • 300 g mayonnaise
  • 100 g yogurt
  • 100 g Cretan graviera cheese
  • Salt and pepper

Execution:

  1. In a large bowl, combine the mixed vegetables with the yogurt and mayonnaise, mixing well.
  2. Cut the chicken and graviera into small pieces.
  3. Boil the potatoes, then mash them into a purée.
  4. Add the mashed potatoes, chicken, and graviera to the bowl with the vegetables, mayonnaise, and yogurt, mixing until smooth and uniform.
  5. Place 4 Organic Triticum Dicoccum Rusks on a plate and top with the salad mixture.
  6. Finish with salt and pepper to taste.
