Chicken Burgers with Yogurt and Tomato Sauce

What we will need:
- 1 kg minced chicken (thigh and breast)
- 1 bunch fresh spring onions, finely chopped
- 1 egg
- ½ glass sparkling water
- 2 garlic cloves, finely chopped
- 1 green pepper, finely chopped
- 1 tbsp aromatic chicken spice mix
- ½ tsp oregano
- Salt and pepper
- A little olive oil for frying
For the tomato sauce:
- 1 medium onion, grated
- 2 garlic cloves
- 2 medium tomatoes, grated
- A few mint leaves
- ½ tsp grape molasses (petimezi)
- 2–3 tbsp olive oil
- Salt and pepper
Execution:
- In a large bowl, add the minced chicken, garlic, onion, pepper, spice mix, oregano, egg, sparkling water, salt, and pepper.
- Knead the mixture well until all ingredients are fully combined.
- Shape into small patties and grill them in a pan with a little olive oil until golden brown on both sides.
- Meanwhile, in a small pot, sauté the onion and garlic in olive oil.
- Add the grated tomato, grape molasses, and mint. Season with salt and pepper and simmer for about 10 minutes, until the sauce thickens.
- Serve the patties topped with the tomato sauce and yogurt, accompanied by Organic Oat Rusks.
