Cabbage Salad with Tuna

A colorful cabbage salad with tuna and Toasted Bread with Turmeric and Mustard, perfect for the festive table! A recipe by Vasilis Patsis!

What we will need:

  • 300 g white cabbage, finely shredded
  • 200 g red cabbage, finely shredded
  • 1 large carrot, grated
  • 1 can tuna in water
  • Parsley, finely chopped, to taste
  • 2–3 spring onions, finely chopped
  • 3 tbsp olive oil
  • ½ cup pomegranate seeds
  • ¼ cup walnuts, coarsely chopped
  • Juice of 1 lemon
  • 1 tbsp vegan mayonnaise
  • 3 tbsp light yogurt
  • Salt, freshly ground pepper

Execution:

  1. Slice all the vegetables into very thin strips and place them in a bowl along with the grated carrot.
  2. Add the tuna, onion, parsley, walnuts, and pomegranate seeds to the bowl.
  3. Finally, add the mayonnaise, yogurt, lemon juice, salt, and pepper, and mix everything well with your hands.
  4. Just before serving, crumble Toasted Bread with Turmeric and Mustard into the salad for extra flavor.
