Cabbage Salad with Tuna
A colorful cabbage salad with tuna and Toasted Bread with Turmeric and Mustard, perfect for the festive table! A recipe by Vasilis Patsis!
What we will need:
- 300 g white cabbage, finely shredded
- 200 g red cabbage, finely shredded
- 1 large carrot, grated
- 1 can tuna in water
- Parsley, finely chopped, to taste
- 2–3 spring onions, finely chopped
- 3 tbsp olive oil
- ½ cup pomegranate seeds
- ¼ cup walnuts, coarsely chopped
- Juice of 1 lemon
- 1 tbsp vegan mayonnaise
- 3 tbsp light yogurt
- Salt, freshly ground pepper

Execution:
- Slice all the vegetables into very thin strips and place them in a bowl along with the grated carrot.
- Add the tuna, onion, parsley, walnuts, and pomegranate seeds to the bowl.
- Finally, add the mayonnaise, yogurt, lemon juice, salt, and pepper, and mix everything well with your hands.
- Just before serving, crumble Toasted Bread with Turmeric and Mustard into the salad for extra flavor.
