Cabbage Salad with Crumbled Barley Mini Rusks with Olive Oil

Salads always have their special place on the table — usually right in the center. As a Mediterranean people, we love simple, wholesome dishes. Beyond the classic green salad or tomato-cucumber combo, there are plenty of easy yet delicious options — like this flavorful cabbage salad you’re sure to fall in love with.

For this salad, we used Barley Mini Rusks with Olive Oil.

What we will need:

 

For the dressing:

  • ½ cup olive oil
  • 1 tbsp Dijon mustard
  • 1 garlic clove
  • Salt and pepper

Execution:

  1. In a large bowl, add the two types of cabbage, radishes, and carrots — all finely chopped or grated as preferred. Then add salt and vinegar.
  2. Mix well and let sit in a colander for about 10 minutes.
  3. Transfer to a salad bowl and add the basil leaves.
  4. Blend the dressing ingredients and drizzle over the salad.
  5. Finally, serve with crumbled Barley Mini Rusks.
