Cabbage Salad with Crumbled Barley Mini Rusks with Olive Oil
Salads always have their special place on the table — usually right in the center. As a Mediterranean people, we love simple, wholesome dishes. Beyond the classic green salad or tomato-cucumber combo, there are plenty of easy yet delicious options — like this flavorful cabbage salad you’re sure to fall in love with.
For this salad, we used Barley Mini Rusks with Olive Oil.
What we will need:
- 200 g radishes
- 200 g white cabbage
- 200 g red cabbage
- 1 carrot
- 1 cup basil leaves
- 60 g white vinegar
- 1 tbsp honey
- 1 tsp salt
- Barley Mini Rusks with Olive Oil
For the dressing:
- ½ cup olive oil
- 1 tbsp Dijon mustard
- 1 garlic clove
- Salt and pepper

Execution:
- In a large bowl, add the two types of cabbage, radishes, and carrots — all finely chopped or grated as preferred. Then add salt and vinegar.
- Mix well and let sit in a colander for about 10 minutes.
- Transfer to a salad bowl and add the basil leaves.
- Blend the dressing ingredients and drizzle over the salad.
- Finally, serve with crumbled Barley Mini Rusks.
